Cornelia Tessari is a Soave Classico winery that believes in using Garganega grape. From 1933 to today, from the vineyard to the bottle, their idea of wine has never changed. Harvesting grapes by hand is a respectful, slow and sustainable gesture. It is not just a tradition, but it represents much more: it’s the symbol of the bond with the land that has nourished us for three generations.

Grape variety: Garganega 100%

Vinification: The grapes come from selected rows in the Costalta area, where during the harvest they are left to over-ripen in the vineyard for 20 days by cutting the shoot. The hand-picked grapes in plastic crates are de-stemmed and transformed into must by soft pressing. The fermentation of the must takes place at a controlled temperature between 16 and 18 degrees in steel tanks for about 12 months. The wine is then bottled, where it will rest for at least 12 months before being released on the market. In this way it is possible to limit the addition of sulphites at the final stages of processing, when the components of the wine are better integrated and less prone to bond with the sulfur dioxide. Screw cap.

Tasting Notes: Bine Longhe is a wine of an intense straw yellow, rich and brilliant color that comes from the late October harvest, after leaving the grapes to over-ripen in the vineyard for about 20 days. Characterized by a strong herbaceous and balsamic scent, fine and fresh, it combines the floral fragrance with lively and juicy fruit. Full mineral taste, enveloping and persistent on the palate, with a slight aftertaste of bitter almond.

Food pairing: Soave is naturally a delicate wine, the beautiful acidity of Le Bine Longhe makes it suitable for pairing with more complex dishes, fish or white meat dishes, sausages and aged cheeses. From salmon to Bolognese lasagna, from chicken curry to risotto with pumpkin up to traditional combinations such as cotechino with pearà or bigoli with sardines.

Alcohol content: 13.5% vol.
