The heart and soul of Brachetto d'Acqui is the Brachetto grape variety. These small, red-skinned grapes are carefully cultivated in the hilly vineyards surrounding the town of Acqui Terme in the heart of Piemonte. The grape's thin skin and juicy pulp contribute to the wine's unique sweetness and aromatic profile. What sets Brachetto d'Acqui apart is its fermentation process. Rather than fermenting the grapes to complete dryness, winemakers halt fermentation while residual sugars remain. This leaves the wine with a natural sweetness, resulting in a low-alcohol, lightly sparkling (frizzante) wine that is perfect for sipping.

Grape variety: Brachetto 

Vinification: After destemming and crushing, the must is macerated with the skins at a controlled temperature for 1-2 days in order to extract the colour. Subsequently, the drawing off takes place to separate the skins from the must in order to continue the fermentation in an autoclave thanks to which part of the gas produced is retained, thus generating the characteristic perlage. The fermentation, from the addition of selected yeasts, takes place at a controlled temperature and lasts about two weeks. Ageing: short period in the bottle.

Tasting notes:
Colour: intense rosé. Bouquet: fragrant and aromatic with sharp hints of raspberries, cherries and strawberries. On the palate: delicately sweet, fruity but not cloying thanks to a well-balanced acidity with the residual sugar.

Food pairing: It goes well with dry pastries and desserts based on fruit, cream and chocolate. Very pleasant as an aperitif and as a refreshing drink at any time of the day.

Alcohol content: 6% vol.

Serve at 6°-8°C
