White wine made from catarratto grapes grown in the Etna district, where the soil is predominantly volcanic, rich in minerals and skeleton. Harvesting takes place at different times: grapes picked in boxes, bunch by bunch, are immediately destemmed and placed in the press.

Grape variety: Catarratto

Vinification: The must is decanted for 24 hours, then it is fermented in steel tanks with temperatures of 16-17°C for about a week and then undergoes malolactic fermentation. After this the wine ages about 4 months on the noble yeasts.

Tasting notes: The wine has a straw yellow colour and the nose has an aromatic complexity with intense floral and tropical fruit scents. In the mouth it is fresh with a good sapidity.

Food pairing: pairs well with fresh cheeses, white meat, shellfish.

Alcohol content: 12.5% vol.
