Limited collection red wine from Etna region: only 1999 bottles produced yearly. The vineyard is located in the northern part of the volcano at an altitude of 620 meters above sea level. The soil is volcanic, rich in minerals and skeleton.

Grape variety: Nerello Mascalese

Vinification: The crushed grapes are collected in stainless steel tanks where fermentation takes place in the presence of the pomace at a temperature of 26-28°C. Once alcoholic fermentation is finished, the wine remains in the presence of the marc for another week before racking. The wine is then put into chestnut wooden barrels where malolactic fermentation takes place. In the barrels, the wine remains for 12 months ageing on the noble lees. After one year of ageing in steel vessels, the wine is refined in bottle for 12 months. 

Tasting notes: Ruby red colour. "Aromas of camphor, wild herbs, red berries and whiffs of smoky flint escape the glass. Reflecting the nose, the radiant, linear and elegantly structured palate features juicy raspberry, blood orange and star anise before finishing on a tangy mineral note. Taut, fine-grained tannins and bright acidity provide lithe support" Kerin O’Keefe

Food pairing: boiled meat, roasted red meat, game, aged cheeses.

Alcohol content: 14% vol.
