This wine was born in the shadow of Etna, in a valley between the Nebrodi mountain range and the volcano. The vineyard is located in the northern part of the volcano at an altitude of 620 meters above sea level. The soil is volcanic, rich in minerals and skeleton. The vineyard, about 40-50 years old, is bush-trained to maintain old traditions with full respect for quality and terroir. The planting density is 6000 vines per hectare. 

Grape variety: Nerello Mascalese and Nerello Cappuccio

Vinification: The crushed grapes are collected in stainless steel tanks where fermentation takes place in the presence of the pomace at a temperature of 26-28 °C. Once alcoholic fermentation is finished, the wine remains in the presence of the marc for another week before racking. The wine is then put into 225-liter oak barrels where malolactic fermentation takes place. In the barrels, the wine remains for eight months aging on the noble lees. After one year of aging in steel vessels, the wine is bottled.

Tasting notes: The wine is deep ruby red with good texture. The nose has hints of ripe berries, spices and vanilla. On the palate it is fresh with soft tannins and some savoriness and quite persistent.

Alcohol content: 13.5% vol.

Food pairing: boiled meats, roasted red meats, game, fresh cheeses.

Serve at 16-18°C
