Trento DOC, an appellation renowned for its sparkling wines, captures the essence of Trentino winemaking. Set amid the dramatic landscapes of northern Italy, it stands for exceptional quality, meticulous craftsmanship and a commitment to sparkling wines that rival the finest in the world.
Grape variety: 100% Chardonnay
Vinification: After careful hand-selection, the whole grapes are gently pressed, using only the free-run must. Fermentation and ageing take place in stainless steel at controlled temperature. The second fermentation is in bottle, following the Classic Method, with long ageing on the lees for three years in an underground cellar.
Tasting notes: Pale straw-yellow with greenish reflections. Abundant, persistent mousse and a very fine, lasting perlage. An elegant, intense bouquet — fragrant and complex, with the floral and ripe yellow-fruit notes typical of Chardonnay, plus subtle hints of hazelnut and lightly toasted bread from the long ageing on the lees. Firm, savoury, mineral and fresh on the palate — a sparkling wine that speaks clearly of the Cembra Valley, a terroir well suited to Trento DOC.
Food pairing: excellent as an aperitif; a fine match for many fish- or vegetable-based appetizers, first courses, risottos and fish dishes.
Alcohol content: 12.5% vol.
Serving temperature: 8–10°C.
