Brachetto is the heart and soul of this wine — small, thin-skinned red grapes grown in the hills of Piedmont, giving a naturally sweet, aromatic style. Fermentation is stopped while some residual sugar remains, for a low-alcohol, lightly sparkling (frizzante) wine made for easy sipping.
Grape variety: Brachetto
Vinification: After destemming and crushing, the must macerates on the skins at controlled temperature for 1–2 days to draw out colour. It is then drawn off the skins and fermentation continues in autoclave, retaining part of the gas to create the characteristic perlage. Fermentation with selected yeasts runs at controlled temperature for about two weeks. Rested briefly in bottle.
Tasting notes: Intense rosé. A fragrant, aromatic bouquet of raspberry, cherry and strawberry. Delicately sweet and fruity on the palate but never cloying, thanks to well-balanced acidity.
Food pairing: lovely with dry pastries and fruit-, cream- or chocolate-based desserts; delightful as an aperitif or a refreshing glass any time of day.
Alcohol content: 6% vol.
Serve at 6–8°C.
