An organic Valpolicella Ripasso from a small plot at 100 m above sea level with a high clay content. This is Ripasso seen through freshness — savoury and complex, fragrant and lively, its cherry and wild-strawberry notes bringing an immediate, authentic feel that recalls homemade cherry jam.

Grape variety: Corvina, Corvinone, Rondinella

Vinification: selective hand-harvest followed by maceration on the skins. Fermentation, including malolactic, in stainless steel. A few months later, dried Amarone grapes are added to trigger a second fermentation that lifts the alcohol and adds extract. Matured 12 months in French oak.

Tasting notes: A balanced, full-bodied and very harmonious red. Cherry fruit and a real delicacy define the style — the bestseller among all Massimago wines.

Food pairing: ideal with a fillet, a vegetarian parmigiana, or a first course with a farmyard-meat ragù.

Alcohol content: 15% vol.

Serving temperature: 16–18°C.
