Valpolicella Ripasso DOC organic made in a small parcel of vineyard at 100 m s.l.m. characterized by a high clay content. Freshness is this interpretation of Ripasso, a wine that is savoury and complex, fragrant and lively. The cherry and wild strawberry notes give immediacy, authenticity and remind of homemade cherry jams.

Grape variety: Corvina, Corvinone, Rondinella

Vinification: selective manual harvest followed by maceration (skin contact). Fermentation, including malolactic fermentation, in stainless steel vessels. Addition of dried Amarone grapes a few months later to trigger a second fermentation that will increase the alcohol level and give the wine greater extract. Subsequent maturation in French oak for 12 months.

Tasting notes: A balanced, full-bodied and very harmonious red wine. Hints of Cherry, delicacy and delicacy characterise the style of this wine, the real bestseller among all Massimago wines.

Food pairing: The ideal combination can be a fillet, a parmigiana for vegetarians or a first course with courtyard meat sauce.
