Alta Langa is known for producing high-quality sparkling wines using the traditional method, similar to Champagne. The vineyard of the Perrone Family is run with commitment and the utmost respect for the environment to achieve the best possible quality. The Perrone family takes care of the entire production chain, from the vineyard to the packaging of bottles. The company believes in sustainability both with regard to the vineyard and for the cellar which has been equipped with a photovoltaic system. The goal is to transmit to those who uncork one of Fabio Perrone bottles the same emotions that the producer feel when he bottles it.

Grape variety: Pinot Noir

Vinification: After the first fermentation in stainless steel, the wine is bottled in spring with the addition of selected yeasts and sugar for the second fermentation. The fermentation is for at least 30 months, after which the wine is disgorged and ready to drink. Ageing: At least 30 months in the bottle with its own yeast. Dosage: after fermentation with the yeast, the wine is not dosed with any added sugar, so it is classified as “natural brut”.

Tasting notes: Colour: straw yellow with golden reflections. Bouquet: bread crusts, yeast and vanilla. On the palate: savoury and balanced with an extraordinary freshness.

Food pairing: Ideal as an aperitif, can be paired with seafood and fish dishes, appetizers and starters.

Alcohol content: 12.5% vol.

Serving temperature: 6-8°C
