Strong, serious and unique — this red ages for two years in concrete, untouched by oak, so its character stays pure alongside a warm, refined, mature palate.
Grape variety: 50% Cabernet Sauvignon, 50% Cabernet Franc
Vinification: A blend of Cabernet grapes made using the Double Reasoned Maturation (DMR) technique in the vineyard: some canes are clamped before full ripeness so the grapes begin to age on the vine, concentrating sugars and giving the wine more structure and power. The healthy, selected grapes are crushed and placed in small vats to ferment, with a maceration that extracts maximum colour and tannin for a harmonious, warm, persistent wine. It then ages 24 months in concrete; after bottling it matures for at least a further 6 months.
Tasting notes: Intense ruby red with garnet highlights. A warm, complex, enveloping nose of ripe berries — blueberry, blackberry and wild strawberry — followed by plum, black cherry and vanilla, with light touches of tobacco, dark chocolate and green pepper. On the palate it is warm, elegant, mature and complex. The long concrete ageing preserves the ripe-berry fruit; soft and pleasantly tannic, with a long, moreish finish.
Food pairing: meat dishes, roasts and stews made with the best cuts.
Alcohol content: 15% vol.
Serve at 16–18°C.
