The Terčič winery sits in San Floriano del Collio, near the Slovenian border on the easternmost edge of northern Italy. The Collio DOC runs along the northern band of the Gorizia province, just over 1,500 hectares of hillside vineyards.
Grape variety: 100% Sauvignon Blanc
Vinification: fermented in steel tanks, then 9 months on the lees. The wine is released after a further 15 months in bottle. Full-bodied yet never overpowering, it reaches its peak after about 4 years. Ageing potential: 7–8 years.
Tasting notes: Straw yellow with green reflections. Inviting, intense and complex on the nose — elderflower and acacia blossom, yellow melon, pineapple, peach and citrus peel. Elegant on the palate, with pleasant acidity, freshness and flavour.
Food pairing: appetisers and fish dishes.
Alcohol content: 13% vol.
Serve at 10–12°C.
