Giorgio Meletti Cavallari is a young winery on the Tyrrhenian coast, within one of Italy's most famous wine areas in Tuscany — the DOC Bolgheri. His Borgeri is a soft, fresh and fruity Bolgheri Rosso of excellent value, aged in barriques for 8 months. It has a fruity, balsamic profile, with wild berries and sweet spices to the fore. The sip evokes the oenological spirit of Tuscany: round, juicy and engaging.
Grape variety: Cabernet Sauvignon 40%, Merlot 40%, Syrah 20%
Vinification: cold maceration for 24–36 hours. Alcoholic fermentation at controlled temperature. Refinement: 8 months in barrique and 8 months in bottle.
Tasting notes: deep ruby red with violet reflections; fresh scent of red fruits, slightly balsamic. The taste is lively, with pronounced but harmonious tannins, good acidity and persistence.
Food pairing: aged cheeses, meat dishes, pasta with ragù.
Alcohol content: 14% vol.
