Alta Langa is known for high-quality sparkling wines made by the traditional method, like Champagne. The Perrone family's vineyard is run with commitment and the utmost respect for the environment to achieve the best possible quality. The family looks after the entire production chain, from the vineyard to the packaging of the bottles, and believes in sustainability in both vineyard and cellar — the latter equipped with a photovoltaic system. The goal is to give whoever uncorks one of Fabio Perrone's bottles the same emotions the producer feels when he bottles it.
Grape variety: Pinot Noir
Vinification: after the first fermentation in stainless steel, the wine is bottled in spring with the addition of selected yeasts and sugar for the second fermentation. It then ages on its own yeast for at least 30 months in the bottle, after which it is disgorged and ready to drink. Dosage: after ageing on the yeast, no sugar is added, so it is classified as 'natural brut'.
Tasting notes: straw-yellow with golden reflections. Bouquet of bread crust, yeast and vanilla. On the palate, savoury and balanced with an extraordinary freshness.
Food pairing: ideal as an aperitif; also pairs with seafood and fish dishes, appetisers and starters.
Alcohol content: 12.5% vol.
