In the beautiful vineyards where Ciù Ciù's wines are made, time seems to stand still to tell the story of their origin. Dedication and tradition — and the belief that wine should express the identity of its land — give rise to a wide range of wines that speak of their home.
Grape variety: Malvasia
Vinification: cryomaceration, gentle pressing and clarification of the must by static settling. The must is kept cold until the second fermentation (Martinotti/Charmat method). Rested 3 months in bottle.
Tasting notes: Full straw yellow tending to gold, with fine, persistent bubbles. An intense nose typical of Malvasia di Candia — apricot, yellow peach and candied citrus, with floral and herbal notes such as sage. Sweet on the palate yet fresh and well-balanced.
Food pairing: perfect with dry pastries and festive bakes (panettone, colomba).
Alcohol content: 10% vol.
Serving temperature: 8–10°C.
