A real cru. With the 1981 vintage, Cerbaiona became a wine brand, launched four years later. Four hectares of vines, low yields and a total production of around 16,000 bottles — these are the numbers of the Cerbaiona farm, where everything is done by hand, including bottling, labelling and capping. The resulting wine is a small masterpiece: no concessions, only the best to make an excellent wine.
Grape variety: Sangiovese 100%
Vinification: fermentation occurs naturally with indigenous yeasts. During the first week of fermentation, to avoid over-extraction and ensure more elegant wines, pump-overs are kept to an absolute minimum while the caps are punched down by hand. Press wine is kept separate from the free run, and the new wines undergo malolactic fermentation in the same upright wood tanks used for fermentation. The wine matures in barrique.
Tasting notes: intense ruby red with garnet hues. The bouquet offers cherry, red wild berries and dried figs, plus floral aromas and a good measure of spice, with finely integrated herbal notes. The nose is broad, fruity, floral, balsamic, ethereal and spicy. On the palate it is powerful, warm, silky, rich, very fine and harmonious.
Food pairing: ideal with roasts and noble meats, wild boar, and perfect with cheese.
Alcohol content: 14% vol.
