Echoing the French idea of the château, Villa Della Torre's Valpolicella Classico Superiore comes from the vineyards around the Renaissance villa, just outside Fumane on the road climbing the hill from Verona. The soils here mix weathered limestone-dolomite with basalt and morainic and river deposits of volcanic origin, letting the vines draw on water in different ways through the growing season.
Grape variety: 70% Corvinone, 25% Corvina, 5% Rondinella
Vinification: hand-harvested in late September and fermented in steel. After maceration, the wine ages 12 months in oak and then six months in bottle.
Tasting notes: Oak ageing gives a complex, deep profile. Medium ruby red, with a bouquet of raspberry, small berries, hints of vanilla and spice. Substantial structure on the palate, with subtle, well-integrated tannins and a fresh, persistent finish — harmonious, smooth and versatile at table. Lovely young, it gains further depth with bottle age.
Food pairing: white and red meat, especially traditional Veronese dishes — chicken, turkey, rabbit, guinea fowl and duck — as well as cheeses from Verona's Lessini mountains and cured meats.
Alcohol content: 13.5% vol.
Serving temperature: 16–18°C.
