Classic Method from Trento DOC, Blanc de Blancs vintage 2016
Grape variety: 100% Chardonnay
Vinification: after careful manual selection of the grapes, soft pressing of the whole grapes, using only the free-run must. Fermentation and aging in stainless steel tanks at a controlled temperature. Second fermentation in the bottle according to the Classic Method and subsequent long aging on the lees for 3 years in an underground cellar.
Tasting notes: pale straw yellow colour with greenish reflections. Abundant and persistent foam; very fine and persistent perlage. Elegant and intense bouquet, fragrant and complex, with floral and ripe yellow fruit notes typical of Chardonnay, but also light and subtle notes of hazelnut and lightly toasted bread, due to the long aging on its own yeasts. Strong, savory, mineral and fresh taste. A sparkling wine that, due to its characteristics, immediately leads back to the Cembra Valley, a very suitable Terroir for Trento Doc.
Pairings: excellent as an aperitif. It goes perfectly with many fish or vegetable based appetizers, first courses and risottos and fish to taste.
