Hailing from the UNESCO-listed hills of Conegliano and Valdobbiadene, this Extra Dry Millesimato is a refined, single-vintage expression of Prosecco Superiore. Crafted entirely from Glera in one of Italy’s premier sparkling wine zones, it perfectly balances freshness with aromatic depth.
Grape Variety: Made from 100% hand-harvested Glera grapes grown on steep, sun-exposed vineyards—ensuring purity and full aromatic character .
Vinification: After gentle pressing, primary fermentation occurs at a cool 15 °C with selected yeasts. The wine then undergoes a slow, secondary fermentation in autoclave using the traditional Charmat method. This process enhances its freshness, finesse, and delicate aromatic profile.
Tasting Notes: Pale straw yellow in color with a persistent, fine mousse. The nose features crisp scents of green apple, pear, wisteria, and acacia. On the palate, it is smooth, fruity, and well-balanced, with bright acidity, subtle white-fleshed fruit flavors, and a clean, slightly apple-tinged finish that refreshes the senses .
Food Pairing: An ideal match for refined starters like white fish carpaccio, shrimp, scallops with potato purée, asparagus and avocado salads, as well as vegetable risottos and delicate pasta dishes. Also works beautifully with light seafood, sushi, and sashimi .
