Giovanni Corino's philosophy rests on a few essentials: meticulous work in the vineyard for high-quality wines that keep their character, and respect for nature — Corino works mainly with copper- and sulphur-based treatments and avoids pesticides, protecting the land, the environment and the health of those who drink the wine.
Grape variety: 100% Dolcetto
Vinification: 5–7 days' maceration in temperature-controlled rotary fermenters at 25–30°C. After drawing off, the wine settles in stainless steel to drop its deposits, resting there until the sugar and malolactic fermentations are complete. It is then racked and matured for 8–10 months in steel before bottling.
Tasting notes: Aromas of cherry, plum and blackberry with a touch of spice. Refreshing and harmonious on the palate, with a full, supple structure.
Food pairing: poultry, risotto, pasta.
Alcohol content: 13.5% vol.
Serving temperature: 16–18°C.
