The grapes come from the Colli Tortonesi in south-eastern Piedmont — more precisely from the Gabetto and Montagnina vineyards, crus with the best climatic conditions: warm winter winds from the Mediterranean over the Apennines, and calcareous, clayey soils (marl) that give the wine elegance, great minerality and complexity.
Grape variety: 100% Timorasso
Vinification: the ripe fruit is harvested by hand in the cool morning hours of the first week of October, to preserve the range of aromas as well as possible. Gentle whole-cluster pressing and cold maceration. Slow alcoholic fermentation at controlled temperature (15°C).
Tasting notes: straw yellow. Floral and fruity bouquet with sweet notes of honey and acacia flowers, over a background of aromatic herbs. Fresh on the palate, with good structure and flavour.
Food pairing: risotto with cheese and white truffle, white meat, fish dishes and shellfish.
Alcohol content: 13.5% vol.
