Società Agricola Fay was founded in 1973 by Sandro Fay who, starting from a small family-run wine business, decided to expand the estate's activities; since 1998 he has been joined by his children Marco and Elena. The estate covers 15 hectares. 'Sotcastèl' is a vineyard of just 0.7 hectares, set at 800 m asl — well above the average altitude, right on the edge of viable grape-growing, marked by quite extreme climatic conditions, low temperatures and acidic-pH soils, planted with Chardonnay.

Grape variety: Chardonnay

Vinification: alcoholic fermentation in stainless steel tanks with cold maceration for 24 hours; ageing for 6 months in stainless steel tanks and in 500-litre oak barrels.

Tasting notes: minerality and freshness are the most distinctive characteristics of 'Sotcastèl', along with notes of botanicals, white peach, green apple, cedar and a hint of cooking herbs.

Food pairing: medium-strong fish dishes, medium-ripened cheese and sushi.

Alcohol content: 13% vol.

Serving temperature: 8–10°C
