Societa Agricola Fay was founded in 1973 by Sandro Fay who, starting from a small family-run wine producing business, decided to expand the estate’s activities; since 1998, Sandro has been flanked by his children Marco and Elena. The business area is 15 hectares."Sotcastèl” is the vineyard of just 0.7 hectares, set at 800 mt asl, well above the average altitude, right on the edge of grape cultivation dominated by quiet extreme climatic conditions, low temperatures and soil with acid PH, planted with Chardonnay grapes. 

Grapes variety: Chardonnay

Vinifcation: Alcoholic fermentation in stainless steel tanks with cold maceration for 24 hours, aging for 6 months in stainless steel tanks and in 500 lt oak barrels.

Tasting notes: Minerality and freshness are the most peculiar chracteristics of “Sotcastèl”, along with notes of botanicals, white peaches, green apple, cedar and a hint of cooking herbs.

Food pairing: medium-strong fish dishes, medium-ripened cheese and sushi

Alcohol content: 13% vol. 

Serving temperature: 8-10°C
