Falkenstein is a family estate run by the Pratzner family at the foot of the Sonnenberg (Monte Sole) in Val Venosta, South Tyrol. Its 14 hectares of vineyards lie on south- and west-facing terraces between 600 and 900 m, and the white wines mature in acacia casks in a cellar carved into the rock. The Pinot Bianco grapes, with dense, medium-sized berries, are hand-harvested from mid- to late September; ageing and bottle rest then let the wine reach its full potential. The soil — key to this style — is sandy, interspersed with granite, gneiss, slate, mica and quartz.
Grape variety: 100% Pinot Bianco
Vinification: fermentation and maturation in large acacia casks (10 months) on the coarse lees, followed by 12 months' bottle ageing.
Tasting notes: Straw yellow with greenish reflections. Aromas of apple, pear and citrus; full acidity and pleasantly crisp on the palate.
Food pairing: perfect with shellfish and crustaceans.
Alcohol content: 13.5% vol.
Serving temperature: 10–12°C.
