A traditional outlook and attention to detail — words full of meaning for the Pratzner family. Their daily work is based on manual labour, with machines only there to provide support. Since 2003, all the wines are vinified in the new cellar, and the white wines age in large acacia casks in a cellar carved into the rock. Excellent varieties such as Riesling, Pinot Blanc, Sauvignon, Gewürztraminer and Pinot Noir grow on 14 hectares (600 to 900 m above sea level). Around 90,000 bottles are produced each year. This South Tyrolean Vinschgau Sauvignon from Falkenstein is fresh and aromatic, born in vineyards on the north side of the valley, in the Naturno area.
Grape variety: Sauvignon Blanc 100%
Vinification: made exclusively from Sauvignon grapes. Fermentation takes place over 7–10 weeks at controlled temperature in acacia barrels; the wine is then refined for 9 months in the same vessels before bottling.
Tasting notes: this Sauvignon shows a straw-yellow colour with brilliant reflections. The nose opens with fresh hints of alfalfa, enriched by pleasant mineral notes. The palate is fresh, iodine-tinged and pleasantly saline. The wine has delicate aromas of green pepper and gooseberry.
Food pairing: perfect with fish dishes, ideal alongside first courses and vegetables.
