Predappio, in Emilia-Romagna, is regarded as a home of Sangiovese. The wide variety of exposures and soils here brings out all the typical nuances of the area, from fruity to peppery, leafy notes. The vineyard is farmed organically, and the wine's lively acidity and body make it a natural match for meat dishes such as pasta bolognese and lasagne.
Grape variety: Sangiovese 100%
Vinification: after the manual harvest, the grapes are brought to the cellar, selected on a sorting table and placed in stainless steel tanks for alcoholic fermentation with indigenous yeasts. Pump-overs and délestage are used during vinification to extract the noble compounds of the berries. 5% of the grapes undergo carbonic maceration for extra freshness. Malolactic fermentation takes place in stainless steel tanks.
Tasting notes: an intense, brilliant red — a gastronomic wine with great drinkability. Freshness and floral aromas take the lead, making it versatile and extremely enjoyable.
