The Perrone family's estate in Piedmont is run with dedication and the utmost respect for the environment. They oversee the whole chain, from vineyard to bottling, and are committed to sustainability in both vineyard and cellar (which runs on solar power). The aim: to give whoever opens a bottle the same feeling the producer has when filling it.

Grape variety: Dolcetto

Vinification: After destemming and crushing, alcoholic fermentation runs at a steady ~25°C with selected yeasts. Regular pump-overs during maceration keep the skins in contact with the must, drawing out tannins, anthocyanins and Dolcetto's characteristic aromas. The wine is then drawn off the skins, matured in stainless steel and rested briefly in bottle.

Tasting notes: Ruby red taking on violet reflections with time. Fruity bouquet with pronounced floral notes; dry on the palate with moderate acidity.

Food pairing: versatile throughout the meal — ideal with first and main courses of not-too-strongly-flavoured meat.

Alcohol content: 13% vol.

Serving temperature: 14–16°C.
