This wine is born in the shadow of Mount Etna in a valley between the Nebrodi mountain range and the volcano. Pinot Noir, an international prestigiouse grape variety has acclimatised well here. The vineyard is located in the northern part of the volcano at an altitude of about 620 meters asl. 

Grape variety: Pinot Nero

Vinification: The grapes are harvested by hand in small baskets and destemmed.
The crushed grapes are collected in stainless steel tanks where fermentation takes place in the presence of the pomace, at a temperature of 26-28°C. After alcoholic fermentation the wine remains with the marc for about a month. After that it is put into the 225-liter oak barrels. In the barrels the wine remains for six months aging on the noble lees. After an additional six months of aging in steel containers the wine is bottled.

Tasting notesDeep ruby red color, which highlights its vivacity and density. On the nose, it opens with a complex and enveloping aromatic bouquet, characterized by aromas of ripe red fruits, including cherries and raspberries, accompanied by delicate floral notes and light spices. You can also perceive nuances of cocoa and a light touch of wood, derived from the refinement. In the mouth, the wine reveals a full and harmonious structure, with soft and well-integrated tannins. The freshness is balanced by flavors of red fruits and spices, creating a rich and enveloping tasting experience. The finish is long and persistent, with a light minerality that invites you to take another sip.

Food pairing: pairs well with cured meats and white meats, stockfish or cod.

Alcohol content: 14% vol.
