This is an Etna Rosso DOC, produced from Nerello Mascalese grapes, a typical variety for the Etna region. Limited edition: only 999 bottles are produced every year. 

Grape variety: Nerello Mascalese

Vinification: Manuel harvest. The crushed grapes are collected in stainless steel tanks where fermentation takes place in the presence of the pomace at a temperature of 26-28°C. Once alcoholic fermentation is finished, the wine remains in the presence of the marc for another week before racking. The wine is then put into chestnut wooden barrels where malolactic fermentation takes place. In the barriques the wine remains for 14 months ageing on the noble lees. After one year of ageing in steel vessels, the wine is refined in bottle for 10 months. 

Tasting notes: Intense ruby red in color, it comes from a harvest with good polyphenolic ripeness and announces itself with notes of red berries, cinnamon and cocoa. While on the palate it is fresh, savoury and with crisp tannin.

Food pairing: game, red meat, aged cheese.

Alcohol content: 14% vol. 

Serving temperature: 16-18 °C
