Nerello cappuccio is the grape variety that gives life to this wine. Traditionally blended with Nerello mascalese to enrich it with color, it expresses its full potential in this single-varietal version. The vineyard is located in the northern part of the volcano at an altitude of 650 meters above sea level. The soil is volcanic rich in minerals and skeleton. The vines, about 10 years old, are trained in the espalier system with a planting density of 6000 vines per hectare.

Grape variety: Nerello cappuccio

Vinification: Grapes harvested manually in boxes, crushed and destemmed, are collected in stainless steel containers where, after a brief cold maceration, alcoholic fermentation takes place in the presence of the marc, at a temperature of 24-26°C with repeated punching-down. At the end of alcoholic fermentation, after about 9 days the resulting wine is racked into stainless steel tanks where it undergoes malolactic fermentation and mature on the lees for at least 9 months.

Tasting notes: The wine is deep ruby red with hints tending to violet; the nose initially perceives a clear scent of cherry and wild berries, followed by hints of spices. In the mouth it is warm, soft with good freshness, soft tannins and quite persistent.

Food pairing: pairs well with red meats

Alcohol content: 13% vol.
