The grapes come from the Colli Tortonesi in south-eastern Piedmont, more precisely from the Gabetto and Montagnina vineyards, Cru that have the best climatic conditions with warm winter winds from the Mediterranean over the Apennines, calcareous and clayey soils (marl), which give the wine elegance, great minerality and complexity.

Grape varietiy: 100% Timorasso

Vinification: The full fruits are harvested by hand in the cool morning hours of the first week of October in order to optimally preserve the variety of aromas. Gentle whole-cluster pressing and cold maceration. Slow alcoholic fermentation at controlled temperature (15°C).

Tasting notes: straw yellow. Floral and fruity bouquet with sweet notes of honey and acacia flowers and with a background of aromatic herbs. Fresh on the palate, with good structure and flavor.

Food pairing: Risotto with cheese and white truffle, white meat, fish dishes and shellfish

Alcohol content: 13.5 % vol.

Serving temperature: 10°-12°C
