For the first time, Valpolicella Superiore appropriates its own identity. Massimago intention is to have a wine with intense aromas, vertical in the aromas of aromatic herbs and spices . A wine that makes you fall in love, this is the secret behind its name. 

Grape variety: Corvina 65%, Corvinone 20%, Tondinella 15%

Vinification: Manual harvest, with half of the grapes stored in special drying chambers for one month. During this period, close monitoring is necessary to ensure the right temperature and humidity level. Cold maceration ('cold soak') for four days to extract aromas and flavours, followed by subsequent fermentation. The rest of the grapes are fermented without being dried. Maturation for 12 months in French oak barrels and large wooden vessels, then a further 12 months' ageing in bottle before release.

Tasting notes: Ruby ​​red colour. Aromas of plums, red berries, black pepper and herbs on the palate. Balanced structure, ripe berries and fine juiciness give the wine great balance and length.

Alcohol content: 14% vol. 

Food pairing: The perfect combination with “Profasio” Valpolicella Superiore wine: Braised beef like grandma handed it down. 

Serving temperature 16-18°C
