Grape variety: Nebbiolo 100%
Vinification: Giovanni Corino's Barolo Giachini was made from 100% Nebbiolo grapes grown in the La Morra area (CN) in south-facing vineyards on clayey-limestone soils. During vinification, maceration of the must in contact with the skins took place for 5-7 days in rotary fermenters at a temperature of 25-30°C. Ageing was carried out in small new French oak barrels for 35% and the remaining 65% for a period of 24 months. Giovanni Corino's 2018 Barolo Giachini matured in steel for 6 months and in bottle for a further 12 months before release.
Tasting notes: The Barolo Giachini from Giovanni Corino has a ruby red colour with garnet reflections. On the nose, aromas of ripe red fruits meet floral hints of violets and notes of vanilla and dark oriental spices. Hints of balsamic herbs and delicate nunaces boiseé. The palate is elegant and structured, supported by a soft tannin structure. The balsamic and spicy finish is long.
Food pairing: On the table, it goes well with mature cheeses and rich, earthy red meat or game dishes.
Alcohol content: 15% vol.
Serve at 18-20 °C
