Grape variety: 70% Pinot nero, 30% Chardonnay
Vinification: Maximum rosé brut is made from 70% Pinot noir and 30% Chardonnay, which are harvested in the first half of September. The vineyards are located in different municipalities of the Adige, Cembra and Laghi valleys at altitudes between 300 and 700 meters above sea level. After the second fermentation, the brut is aged on the lees for 36 months.
Tasting notes: Delicate old pink color. Persistent perlage. A delicate nose of raspberries and ripe peach, some yeast. Of remarkable complexity. On the palate of great elegance. The aromas of the nose are repeated. In addition, almost balsamic notes. The finish is remarkably long and characterized by delicate hints of yeast.
Food pairing: For aperitif, shrimp cocktail and bresaola.
Alcohol content: 12,5% vol.
