Al-Cantara is born on the slopes of Etna at an altitude of 650 meters above sea level. The soils, of volcanic origin, are formed by a geological substratum of eruptive rocks, the texture of which is sandy and rich in skeleton. The climate is typical Mediterranean with large temperature ranges between day and night. In this context the company grows also olive trees, olea europea, an evergreen and very long-lived plant. The planting density is 400 plants per hectare. The variety used are "Nocellara Etnea" for 80%, "Brandolfino "and "nocellara comune" for 20%.
Production process: The olive harvest is done exclusively by hand with the help of combs in the period of veraison. The production per plant is about 25 kilos. The harvested olives are stored in rigid, ventilated containers at a temperature below 15°C. Milling, after separation from the leaves and washing, is done by "cold" mechanical processes within 48 hours of harvesting. During oil extraction, the temperature of the processing water does not exceed 28°C. The maximum yield of olives in oil is less than 19%.
Tasting notes: The oil obtained, has a golden yellow color with green reflections. The smell is light fruity. The flavor is very fruity with light bitter and spicy sensation. The maximum total acidity, expressed as oleic acid, by weight, is less than 0.5 per hundred grams of oil.
